Minapa Ladoo /Urad Dal Ladoo – Sunnundalu

Sunnundalu or Urad Dal Laddu or Minapa Laddu from Andhra Pradesh cuisine is seriously a good one. Not because it’s delicious and to make. But also because this is one of those recipes where you can use black gram(urad dal) to make a nice dessert. Andhra Pradesh is made during Hindu festivals. Variations of the Sunnundalu recipe may also include flavourings such as cardamom powder or some nuts and dry fruits. Add green cardamom as optional.

Ingredients

• Dried fruits (raisins, cashews) – 1/2 cup.

• Urad Dal – 2 cups.

• rice – 2 spoons.

• Cardamom powder – 1 tsp.

• Ghee – as needed.

• Sugar – 1 and 1/2 cup.

Method:

Use a thick-bottomed pan or kadai.

Keep the heat on low or sim and begin to roast the urad dal. Fry the urad dal in a pan until it turns slightly golden brown.

Stir often, while roasting.

 Then put the rice in the same pan, and fry until golden. Roasting urad dl well is very important. Half-roasted urad dal can give stomach aches.

Now let the dal cool in the pan itself or you can remove the dal in a plate and let it cool.

Now, Once lentils have become warm or cooled, add them in a grinder jar. Also, add 4 green cardamom pods.  mix it into a fine powder.

Begin to sift the flour on a plate, tray, large bowl or pan. Keep the urad dal powder aside.

In the mix the sugar in the same blender separately and keep it aside. Take a pan, add a little ghee, and fry dry fruits (raisins, cashew nuts), until the raisins swell a little. In a bowl put all the ingredients (urad dal powder, sugar powder, cardamom powder, dry fruits) and mix well. Finally, sprinkle clarified ghee and make laddoos. The delicious Urad Dal Ladoo sunnundallu is now ready to serve.
