Ingredients
- 1 small cup of Yogurt/Curd
- 3 tsp grated Carrot
- 3 tsp finely chopped cucumber
- 3 tsp finely chopped Onion
- 2 Green Chillies finely chopped(Optional)
- 1tsp finely chopped Coriander Leaves
- Salt to taste
For Tempering (optional)
- 1/2 tsp Mustard Seeds
- 1/2 tsp Urad Dal
- 2 Red Chillies
- few Curry Leaves
- 1 tsp Oil
Instruction

Place yoghurt in a mixing bowl and whisk well. Then add the above ingredients except for Tempering.
Mix well and keep aside. Heat oil in a small frying pan add Tempering ingredients and fry, once done add it to the prepared curd mixture and mix well. Now carrot capsicum raita is ready. Serve it as a side dish for rice or roti.
