Drumstick Leaves Powder /Munagaku Podi

Drumstick leaves also known as moringa leaves are a superfood and have been well-used in South Indian kitchens since ancient times. The leaves have numerous dietetic values and it is very healthy. It can be grown simply.

INGREDIENTS

  • 1 cup Munagaku/Drumstick Leaves
  • 20 Red Chillies
  • 1 small cup of Urad Dal
  • 3/4 cup Chana Dal
  • 2 sp Coriander Seeds
  • 2 sp Sesame Seeds
  • 1/2 tsp Cumin Seeds
  • 1/4 sp Methi Seeds
  • 1″ Tamarind Flake
  • 4 no Garlic Cloves
  • enough Salt

INSTRUCTIONS
How to make

Pluck drumstick leaves/munagaku from the stems wash thoroughly and strain. Then spread it out on a cloth, preferably in a little sunlight to remove moisture.

In the meantime, heat a pan and add urad dal, chana dal, coriander seeds, cumin seeds, and methi seeds and dry roast, once 3/4 done add sesame seeds to it and fry them on a medium flame until golden brown in colour, then transfer to a bowl.

In the same pan add red chillies and fry, when done transfer to a fried dal bowl.

Add munagaku/drumstick leaves in the same pan and fry until it has a raw smell. Allow it to cool down completely.

Once cooled, grind all ingredients into fine powder, tamarind, salt and garlic cloves. Now healthy, tasty and spicy mungaku podi/drumstick leaves powder is ready to serve, remove from the jar and store it.

Serve with hot rice and South Indian breakfast recipes, Idli and Dosa.
