Bottle gourd curry that’s healthy, easy to make and tastes simply delicious. This recipe is extremely simple. Serve this bottle gourd curry with rice, roti or paratha. Sure you will just love this with anything. Bottle Gourd is known by many different names, long melon, opo squash, calabash, sorakaya, etc. It has also grown in different shapes across the world. Also Known as lauki in Hindi. Bottle gourd is often used to make curries, sambar, dal stew, soups. Bottle gourd halwa and sorakaya chutney.

Ingredients
Bottle gourd/ Sorakaya ( chapped)
Tomato (Cut finely) – 1 or 2
Onions ( Cut finely) – 1 Big Size
Turmeric Powder – 1/4 Tbs
Green chillies – 6
Tamarind – small lemon size
Jeera – 1/2 tbs
Garlic – petals
Salt – as required
Oil – as required
Curry leaves – 1 spring
for Tempering
Mustard seeds – 1/2 tbs
Urad dal – 1 tbs
Bengal gram dal – 1 tbs
for Garnishing
Coriamder leaf – 1 small bunch
Instruction :
Bottle gourd cut into small pieces.

Add cut chillies, onion, tamarind extract, salt, chilly powder and pressure cook for 10 minutes.
Once fully cooked, add roughly mash tomato and sorakay mixture, do not make it into a fine paste.

In a pan, heat the remaining oil and add mustard seeds, jeera, garlic, methi seeds, curry leaves and onions and let them fry till the onions get a golden brown color.
Now add the onion mixture to the mashed bottle gourd and tomato mixture.
Adjust salt and tamarind paste.

Add seasonings and garnish with curry leaves before removing from fire.
