Drumstick Tomato Curry is a simple recipe. Drumstick curry recipe Andhra style vegetable drumsticks cooked in a spicy onion tomato curry. Drumsticks are one of the most commonly eaten veggies in South Indian states. These are the pods of the considered to be great for digestion. We use them to make curry, sambar, stew(pulusu), rasam and even pickles. The recipe is made with tender drumsticks, tomatoes and onions as the main ingredients. One can make Drumstick tomato curry with fewer ingredients. We can add vegetables like potatoes or brinjals to this recipe or add boiled eggs. Adding tomato and onion in proper quantity will increase the taste of this recipe.
This recipe is light on digestion and is packed with nutrients, Vitamin C, Vitamin A and dietary fibre. Choosing drumsticks while cooking these recipes matters, if they are tenders then we need not remove their skin.
Ingredients
Drumsticks – 3 number whole sticks
Tomatoes – 1 bowl
Onions – 1 bowl
Green chills – 4 numbers
Red chills – 2 numbers
Garam masala Powder – 1 pinch
Coriander leaves – 1/2 bowl
Oil – 3 tbsp
Mustard seeds – 1/2 tbsp
Cumin seeds – 1/2 tbsp
Turmeric powder – 1/2 tbsp
Salt to taste
Few Curry leaves
Red chilli powder 1/2 tbsp
Water – 1 glass (200ml)
How to make Drumstick Tomato curry
Heat oil Add oil to a pan and when it is hot add cumin seeds, mustard, curry leaves and red chillies.

Once the mustard seeds splutter add sliced onion pieces and green chilled and saute them till they turn their colour to translucent.

Drumsticks and cut them into small pieces of your desired size. Add them to onions and add a little salt and turmeric powder, mix well
Let drumsticks get cooked at low temperature with the lid covered for 5 minutes. Add tomatoes again and cook for 5 minutes with the lid covered.

Once tomatoes turn soft add red chilli powder, and water and cook further till drum sticks turn soft. Once you get thick gravy, add a little garam masala powder and mix well. Add a little coriander leaves and mix.

Serve Drumstick tomato curry or Munakkada tomato kura hot accompanied with rice roti or chapati.
